What Makes Palestinian Za'atar from Palinova Different?

Za'atar is more than a seasoning—it's a part of Palestinian culinary heritage. While many commercial za'atar blends are produced for consistency and lower cost, Palinova takes a different approach by focusing on authentic ingredients, traditional preparation methods, and the natural character of each plant.
Here's what sets our Palestinian za'atar apart.
1. We Use Authentic Origanum syriacum
The heart of our za'atar is Origanum syriacum, also known as Syrian oregano or Biblical hyssop. This is the traditional herb that has been used in Palestinian za'atar for generations.
Some commercial blends use alternative oregano Known as D4 or marjoram species that are easier or less expensive to cultivate. At Palinova, we remain committed to using authentic Origanum syriacum to preserve the traditional aroma and flavor that define genuine Palestinian za'atar.
2. Our Origanum syriacum Leaves Are Carefully Shade-Dried
Drying is one of the most important steps in preserving the quality of aromatic herbs.
Instead of prolonged drying in direct sunlight, we dry our Origanum syriacum leaves in the shade for a carefully controlled period. This traditional method helps protect the herb's natural aromatic compounds and preserves its fresh herbal character.
The result is a za'atar blend with a vibrant aroma and flavor that reflects the quality of the harvested plant.
3. We Use Wild-Crafted Sumac
Sumac adds the bright, tangy flavor that is essential to traditional Palestinian za'atar.
At Palinova, we use wild-crafted sumac and avoid adding citric acid or artificial acidifiers to imitate its natural tartness. By relying on carefully selected sumac, we preserve the authentic taste and character of this traditional ingredient.
4. We Add Pistacia palaestina Seed Powder
One feature that makes our blend truly distinctive is the addition of 10% finely ground Pistacia palaestina seeds.
This native Palestinian tree has long been part of the region's natural landscape. Its seed powder contributes subtle nutty and earthy notes that complement the traditional za'atar blend and reflect Palestine's rich botanical heritage.
5. No Added Oils—Just the Natural Flavor of the Plants
Some commercial za'atar products include added vegetable or other oils during production.
At Palinova, we do not add oils to our za'atar blend. We believe the herbs and spices should express their own natural flavors and aromas without unnecessary additions. This allows the authentic taste of Origanum syriacum, sumac, sesame, and Pistacia palaestina to shine through.
Rooted in Palestinian Tradition
Every ingredient in our za'atar is chosen with respect for traditional Palestinian recipes and careful preparation. From authentic Origanum syriacum and shade drying to wild-crafted sumac and the unique addition of Pistacia palaestina, our goal is to create a blend that reflects the richness of Palestine's botanical heritage.
Whether sprinkled over fresh bread with olive oil, added to roasted vegetables, or used to season your favorite dishes, Palinova's za'atar is crafted to celebrate authentic flavor and quality.
